The first step you can take towards perfectly-cooked poultry is buying a Hamilton Beach 18 quart roaster oven that can cook, warm, roast, and bake. This flexibility, along with an adjustable temperature range (from 200 to 450 degrees Fahrenheit) and a rack that allows heated air to circulate around the entire turkey, will give you superior control over the state of your holiday bird. Ingredients

  • 2 large shallots, roughly chopped
  • 1 medium onion, roughly chopped
  • 2 celery sticks, roughly chopped
  • 2 unpeeled medium green apples, roughly chopped
  • 2 garlic cloves, roughly chopped
  • 4 tbsps unsalted butter
  • Kosher salt
  • Freshly ground black pepper
  • 1 medium loaf rustic country bread, cut into 1" cubes (about 10 cups)
  • 1-1/2 cups low-sodium chicken broth
  • 1/2 cup apple cider
  • 1 tsp chopped fresh rosemary leaves
  • 1-1/2 tsp chopped fresh thyme leaves
  • 1/2 cup dried cranberries
  • 2 eggs, lightly beaten

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a food processor, chop the shallot, onion, celery, apple, and garlic until finely chopped.
  3. In a 10-1/5" oven safe skillet, heat butter over medium-high heat.
  4. Add in the chopped vegetable mixture, season with a generous pinch of salt and pepper, then cook until tender, stirring occasionally (7-8 minutes).
  5. Reduce heat to medium, add the bread cubes, then cook until softened, stirring occasionally (5-7 minutes).
  6. Remove pan from heat and stir in the broth, cider, rosemary, thyme, and cranberries. Once the liquid is completely absorbed, stir in the eggs, transfer the pan to the oven, and bake until browned on top and cooked through (20-25 minutes).

Let's be honest - without mashed potatoes, Thanksgiving just wouldn't feel complete.
