What is Induction Cooking?
The concept of induction cooking is straightforward: the induction range creates magnetic fields that cause the molecules in your cookware to generate heat. This is unique compared to other common forms of cooking because it means that your cookware becomes the source of the heat, rather than just the conductor.
For your induction range to work, you need to use magnetic cookware that is constructed of ferrous metals such as cast iron or certain stainless steels. Due to the popularity of induction cooking, many manufacturers are now labelling products that fit this criteria as “induction-ready” so you can be sure you are picking the right pan for the job.
If you pick a pan that is made of non-ferrous metals (aluminum, for example), the pan will not react to the magnetic currents and will therefore not heat up. Many pans use a combination of both non-ferrous and ferrous metals, leading them to still be suitable for induction cooking.

Vollrath’s Induction Ranges

Rapids offers a number of different Vollrath induction ranges. All come with a 6' cord and the safety features listed in the paragraph above. The cases are made of 18-gauge stainless steel with a ceramic top.
The 120V Commercial Series Induction Range and the 208V Professional Series Induction Range have a 90% energy efficiency rating. The 120V is designed for light- to medium-use front-of-the-house cooking, while the 208V can handle both back-of-house and front-of-the-house cooking.
The 120V has 9 heating levels, 7 temperature holding positions, an easy-to-read LED bar, and pushbotton controls.
The 208V, on the other hand, has 100 settings to give you precise temperature control. The design includes continuous-duty induction circuitry for non-stop cooking, and the timer function allows you to start cooking and then walk away - the unit will shut off when the timer hits 0. It comes with a 2-year parts and labor warranty.
Vollrath also offers the Mirage Cadet and the Mirage Pro. These ranges include a safety auto-shutoff function and a 180 minute timer.
The Cadet has 20 power levels, as well as a 75% energy efficiency rating. The pushbutton controls are easy to clean, and the top displays HOT when the cooking surface is hot, even when the unit is turned off. It's designed for light-duty front-of-the-house duties.
The Pro has 100 power levels and Fahrenheit/Celsius temperature control, a 90% energy efficiency rating, and a variable speed knob for fast temperature adjustment. Rubber feet prevent slipping. This unit can handle light to medium duty front-of-the-house cooking.
Induction-Ready Pans from Vollrath
The Vollrath Intrigue line consists of sauce pans, stock pots, sauté pans, and fry pans, all of which are induction-ready. The 8-8 stainless steel construction includes a permanently-bonded 1/4" thick bottom layer made of aluminum and stainless steel for efficient heat distribution and durability.
