Most commercial food warmer units are designed to be filled with water in order to produce a moist heat that helps keep prepared food from drying out or being overcooked. However, it is important to instruct your food-service staff to keep stirring the food because some parts of a stew or soup can still dry out if not stirred, even if kept or displayed in a countertop warmer.
Some Important Factors to Consider before Purchasing a Countertop Food Warmer
The size and capacity of your countertop food warmer should be, first and foremost, on your mind before going out and forking over your money. This is because the overall size and width of the commercial food warmer that you will want to purchase plays an important part in determining how much of the available countertop space in your restaurant or food-service establishment you should allocate for the unit.
It's important to remember that although most countertop warmer units are usually designed to hold at least a one full-size hotel pan up to six inches in depth, there are some commercial food warmer units that are longer and can hold more food.
Standard-size hotel pans usually hold up to twenty-two quarts, and a countertop food warmer that can hold more than twenty-two quarts will be a tad bit longer or will have a slightly different configuration. In addition, some commercial food warmer models will not have the pans included, so it is always a good idea to make sure that you already have them or to purchase pans beforehand. Also, remember that the countertop warmer is designed to hold water that is used to warm the food, not the food itself.
