What Is a Dish Table?
A dish table is an excellent place to organize your dirty dishes before washing them in your dishwasher. It is also a great place to keep your clean dishes sanitary before putting them away in your shelves or cupboards.

Types of Dishtable Units and How to Use Them
A dishtable can either be a soiled dish table or a clean dish table. A dirty dish table usually features some or all of the following: a scrap block, a small sink, and faucet holes. In most restaurant or industrial kitchens, a garbage can is positioned right below the scrap block, a garbage disposal is attached to the sink, a pre-rinse sprayer is found near the faucet holes, and a dish rack is located the right of the sink.
Food-service staff usually wash the dirty dishes and place them directly into the rack. When the rack is full, off to the washer or onto the conveyor it goes. A clean dish table is usually found at the other end of the machine. This is where the clean racks of dishes are found so that the dishes can be air-dried and then unloaded.
The configuration of dishtable units (both a soiled dish table and clean dish table) is located on either the left or right side of the machine in order to accommodate the direction of operation in the dish room. Dishtable units also feature lips that can be attached to the opening of the washer, and the table surface is positioned in such a way that it is stamped and slopes toward the machine. Configuration allows water to be drained into the washer and not become stagnant or pool up on the table, which can potentially result in a breeding ground for dangerous bacteria and disease-carrying mosquitoes.
