Commercial Charbroilers/Griddles and How They Work

A commercial charbroiler or commercial griddle is commonly used by restaurants that serve charbroiled or grilled food to customers. Fast food restaurants and greasy spoons are the establishments that most often use commercial griddles, since a large portion of their menu is hamburger patties, sausages, hotdogs, eggs, bacon, and other similar foods.

A commercial stove top griddle is typically used in restaurants and other food-service establishments while a portable commercial griddle can be used in stalls that serve fast food outside stadiums and ballparks. A portable commercial griddle can also be used at picnics or other outdoor parties.

A griddle consists of a broad flat surface that can be heated using a variety of means. The griddle is usually a flat metal plate; however, some people also use other types of griddles (for personal use) that are made of brick or stone.

Almost all home or commercial griddles or commercial charbroilers are heated directly or indirectly by use of open flame or even electrical elements.

Commercial Electric Griddles and Commercial Gas Griddles Compared

A commercial electric griddle generally uses a thinner plate material than a commercial gas griddle, meaning griddles have an improved heat transfer between the bottom-mounted elements and the cooking surface.

One advantage of commercial electric griddles is that they have a longer life expectancy due to the relative simplicity of its system. However, a disadvantage is that they are relatively less productive.

Because of its reliability, a commercial gas griddle is still one of the most popular types of griddles used in restaurants and food-service establishments. Commercial gas griddles are common in commercial cooking environments because of their faster heat-up and consistent heating temperatures. Commercial gas griddles tend to heat the plate more evenly thanks in large part to a film of hot gases that covers the entire bottom of the plate surface. A commercial propane griddle is one of the most popular commercial gas griddles in use today.
