What Is a Dough Box?

A dough box is used by commercial pizza places for proofing dough that is eventually fashioned into a pizza pie and then baked in an oven. Using a dough proofing box is the most convenient way of proofing pizza dough, and it is not uncommon to see several boxes stacked on top of each other in a busy pizza kitchen.

How is a pizza dough box used? Pizza dough is kneaded and mixed with yeast, after which it is placed inside a dough proofing box to rise overnight and ready for a busy pizza kitchen's operation the next day.

How Should You Choose Your Establishment's Pizza Dough Storage Boxes?
