Commercial Pizza Pans

Almost all pizza places will need pizza pans in which to bake their signature pizza pies. Pizza baking pans, however, are not limited to cooking or baking pizzas as pizzerias can also use them to serve their pizzas.

In serving pizza, it is important that the crust cooks quickly and fully to avoid being soggy. This is true especially for pizzas that have thick crusts or pizzas that are fully loaded with toppings. Lots of toppings such as meats and cheeses tend to insulate the crust from the heat above the oven, making bottom heat especially important. This is why restaurant pizza pans are some of the most important pieces of equipment in a commercial pizzeria.

An important thing to consider is whether you should get dough pans that are solid or perforated. You may ask: what's the difference? Perforated pizza baking pans help cook pizza crusts thoroughly, although they are mostly suited for thin, crispier crusts. This is because perforated commercial pizza pans, with spaces between the pan and dough, facilitates hot air movement. When using perforated pizza dough pans, heat can hit the crust directly, which makes the pizza bake a lot quicker, resulting in a crispier crust. Perforated pizza baking pans, in addition, help keep the pizza crust from getting soggy after baking, especially when the pizza is not served right away.

Solid commercial pizza pans, on the other hand, will result in a very chewy, doughy crust (and are suitable for thick-crust pizzas). However, the pizza will take longer to bake or cook since the heat has to go through the pan's solid surface.

Pizza Screens

A pizza baking screen is a fine mesh pan that is used to bake and cook pizza. Compared to pizza baking pans, pizza screens help transfer heat faster to the pizza crust. A pizza screen, because it can result in a very quick-cooking pizza, is a great choice for establishments that specialize in fast-delivery pizzas. However, unlike solid or even perforated pizza baking pans that can double as a serving pan, pizza screens do not work as well as serving pans. You will have to transfer the pizza from the screen to a proper serving pan.
