The Vollrath Cayenne 36" heated shelf provides two independently controlled heating zones across a 36" x 20" stainless surface — a pass-through shelf for maintaining plated food temperature between the kitchen and the service window. The right-aligned zone controls manage the front zone (20"W x 13.4"D) and back zone (20"W x 6.6"D) independently for flexible temperature management across the shelf depth.

  The Vollrath Cayenne 36" heated shelf is a pass-through warming surface for commercial kitchen pass windows and food service lines — a flat, heated stainless surface positioned between the kitchen and the service area where plated food waits while service staff coordinate delivery. Maintaining plated food at safe temperatures during this window period is the critical function the heated shelf performs; food that loses temperature during pass-through is a food safety risk and a guest experience failure.

Two independent heating zones allow the shelf's depth to be managed for different food staging needs. The front zone (13.4" deep) is the service side where plated items are held for immediate pickup — running the front zone at the appropriate holding temperature maintains food temperature for the brief staging period before service. The back zone (6.6" deep) can operate independently for staged holding of items that are further from service — or turned off during lower-volume periods to reduce energy usage when the full shelf depth isn't needed.

Right-aligned controls position the zone thermostats on the right side of the shelf — out of the primary pick-up area while keeping them accessible to kitchen staff managing the pass window. The thermostatically controlled rope-style elements provide even heat distribution across the full shelf width, avoiding the hot spots and cold zones that simpler element designs can create at the 36" span.

Aluminum core construction provides the thermal mass and conductivity that a heated shelf requires — aluminum distributes heat from the element more evenly than less thermally conductive materials, maintaining consistent surface temperature across the full 36" x 20" area. The stainless steel top and outer construction are appropriate for a food-contact surface in continuous service.
