The Vollrath Cayenne OCH-500 heat lamp with dual red infrared bulbs maintains serving temperatures over a 12" x 20" area with the heat-emphasis red bulb option — red infrared bulbs deliver slightly more heat output emphasis than white bulbs and are traditionally used in high-heat-demand food service applications. Same construction as the white-bulb OHC-500: stainless steel one-piece cantilever hood, U-shaped tubular base, adjustable 12"–20" bulb height, cord-mounted on/off switch, non-skid feet.

The Vollrath Cayenne OCH-500 is the red-bulb version of the Cayenne 500W cantilever heat lamp — same construction, same adjustability, same coverage area, with red infrared bulbs in place of white. The choice between red and white bulbs in commercial food service heat lamps is partly practical and partly aesthetic: red infrared bulbs traditionally carry an association with carving stations, premium food service presentations, and meat-focused service environments where the warm red glow has become part of the expected visual character. White bulbs are neutral and broadly applicable; red bulbs are specific to this traditional food service aesthetic.
Red infrared bulbs emphasize heat wavelengths slightly differently than white infrared — producing a higher proportion of longer infrared wavelengths that some operations find more effective for maintaining surface temperature on certain food items, particularly skin-on poultry and roasted meats where surface temperature maintenance is the priority. The visual difference is the red-tinted illumination that distinguishes this lamp from white-bulb versions.
The structural construction is identical to the OHC-500: stainless steel one-piece cantilever hood that directs heat evenly over the 12" x 20" full-size pan area, U-shaped tubular base that accepts full-size pans directly below the lamp, chrome-plated legs and uprights for a professional appearance, and cord-mounted on/off switch for accessible control. The 12"–20" bulb height adjustment range provides the same calibration capability for different food heights and temperature maintenance requirements.
