The Vollrath 36" heavy-duty thermostatic griddle takes the same 1" polished cooking surface and 90,000 BTU U-shaped burner platform as the manual-control 36" model and adds thermostatic temperature control — the difference between a cook actively managing gas valve position to maintain temperature and a control system that maintains the temperature automatically.
