The solid door reach-in format is the standard choice when operations need the interior shelf space for larger containers, bulk prep items, and hotel pans that don't work in a drawer configuration. The two included epoxy-coated wire shelves on adjustable pilasters allow interior layout to be customized to the containers in use.
At the top, eight included 1/6-size polycarbonate pans at 4" depth load into the pan rail, which accommodates up to 6" deep pans for higher ingredient volume. This top-rail prep station is the operational core of the unit — the surface where line cooks access mise en place ingredients at speed during service. The pan rail's full-access design for easy cleaning allows end-of-shift cleaning without obstruction.
