The Vollrath Cayenne Model T43R four-third-size rethermalizer is the high-capacity buffet rethermalizing solution for operations running multiple food products simultaneously from a single unit. Four 1/3-size pans in a single well — a configuration that allows four different soups, sauces, gravies, or hot liquid products to be held at safe serving temperatures simultaneously without the space and management overhead of four separate units.
The oversized thermoset fiber-reinforced self-insulating resin well is the energy efficiency foundation of the T43R. The well's insulating properties retain heat within the well, reducing the energy required to maintain operating temperature during the service period after the initial rethermalizing phase. The dual 800W elements (1600W total) provide the heating power to rethermalize this large capacity efficiently — the dual element configuration distributes heat more evenly across the oversized well than a single element of equivalent wattage would.
Direct-contact heating concentrates energy into the product directly, using up to 25% less energy than comparable indirect water bath systems. The nonstick element surfaces prevent the mineral scale buildup that reduces heating efficiency over time in water bath rethermalizers — the nonstick surface allows scale to be wiped away rather than requiring chemical descaling.
The capillary tube thermostat provides accurate temperature control appropriate for the temperature range the T43R operates in.
