The Vollrath Cayenne twin 7 qt. rethermalizer runs two independent 7 qt. wells simultaneously with separate thermostatic controls and rethermalizing timers — allowing different soups, sauces, or stews to be heated and held at different temperatures from a single unit.  The Vollrath Cayenne twin 7 qt. rethermalizer solves the multi-product soup and sauce service problem — the daily kitchen need to heat and hold two different soups, sauces, or chilis simultaneously at different temperatures from a single countertop unit. Two independent 700W wells with independent thermostats allow each well to be set at the temperature appropriate for its contents, rather than forcing both products into the same temperature regardless of their requirements.

The rethermalizing timer on each well is the feature that distinguishes a rethermalizer from a simple warmer. A rethermalizer is designed to take product from refrigerated temperature to safe serving temperature (above 165°F) in a controlled cycle. The timer tracks this rethermalizing cycle and stops active heating when the timer ends, signaling that the product has reached temperature and should transition to holding mode. The operator then sets the holding temperature — a lower wattage level appropriate for maintaining rather than climbing — to sustain the product through the service period without overcooking.

The direct-contact heating system concentrates heating energy directly to the inset rather than through an indirect water bath, using up to 25% less energy than equivalent water bath designs. This efficiency advantage adds up over a service life measured in thousands of rethermalizing cycles.

Knob guards on both thermostatic controls prevent the accidental adjustment that exposed knobs experience during counter cleaning and active service.
