Thirty 1/6-size pans in the 72" mega top rail provide the breadth of refrigerated ingredient access appropriate for the most complex commercial menus — 30 simultaneously available refrigerated ingredients at the rail level. The forced-air chambered rail refrigeration maintains 32–41°F consistency across all 30 positions at the full 72" span. The 8" deep full-length cutting board provides a working surface spanning the width despite the expanded rail.
Three independently accessible interior sections with two adjustable epoxy-coated wire shelves each provide six total shelves across the 72" interior — the maximum shelf count in the CLST line.
