A Look at Commercial Kitchen Scales

A commercial food scale or a commercial kitchen scale is a type of weighing scale specifically used in commercial or restaurant kitchens. Basically there are two types of scales: mechanical and digital scales. There are those, however, that can be considered specialty-type scales.

Commercial kitchen scales are versatile in that they can be used in different commercial food-service establishments like restaurants, delicatessens, diners, grocery stores, supermarkets, and butcher/meat shops.

Differences between Mechanical and Digital Scales

What are the main differences between a mechanical and a digital scale? Mechanical commercial kitchen scales are mostly spring-dialed. Unlike a commercial digital scale, a mechanical scale does not require batteries and commonly comes with a jug or bowl where the food is placed. The weight is shown on an analog dial. One disadvantage of a mechanical scale, though, is that it is not as precise. However, if you are looking at measuring something where you can compromise one or two grams, then a mechanical scale will do.

Commercial digital scales use batteries and deliver more precise results. A commercial digital scale displays results in a digital display, which on most models may even allow you to switch between imperial and metric measurement and have settings depending on the ingredients or the food stuffs to be weighed—either wet or dry. Generally, commercial digital scales can provide better accuracy and precision compared to mechanical scales. In fact, sometimes a small change in quantity will not be detected by a mechanical scale, which can lead to errors in measurement. Digital scales, which are more sensitive, will not pose this problem.
